Question on the episode or how he said something

On his monologue or during the show he said the Irish Poem and added his own twist. He said something like "May the road rise up to meet you and may the wind at your back always be yours". I was wondering what episode he said this or how he said the whole phrase.  A link to a youtube of this would be great also
